A Taste you Can Bring Home: Brown Sugar Pavlova

For those wishing to take a little piece of the Cook Islands home, our beloved Brown Sugar Pavlova offers the perfect sweet treat.

Ingredients:

  • 4 egg whites

  • 250 g soft brown sugar

  • 1 tsp vinegar

  • 1 tsp cornflour

  • Whipped cream and fresh tropical fruit

Method:

  1. Beat egg whites until stiff, gradually adding sugar.

  2. Fold in vinegar and cornflour.

  3. Bake at 150 °C for one hour and allow to cool.

  4. Top with whipped cream and tropical fruit such as mango, passionfruit, and banana.
